EDIT: We have been using this 3 liter 9.5 inch pan for over 2 years now and it is still like new. We now have several of these splatter-like ceramic pans and they are all great. This one is still one of my favorites. LARGE FRYING PAN We use very limited high heat. medium flame. ----After 8 1/2 months of almost daily use, this pan is still like new and the non-stick surface is as good as day one. It's become my absolute favorite pan and I've used it a lot in my 45 years as a chef. I've ruined similar ceramic pans with high heat in the past, so in this case I only use low to medium heat (which still cooks the same as other Teflon/stainless steel pans). ).If I'm stir frying, I use medium heat or less. If the pan is filled with soup or other liquid, I use high heat until it boils, then go back to medium or low heat. I am very happy with this pan and will buy more of this line if needed. I wish they made a similar square pan. This pan is so smooth you can just wipe it down with a cloth, but we always hand wash it with a soft brush and soapy water for a few hours after use (once it's cooled) and towel dry.
