When placed in a hot oven set at 450 with another thermometer reading 450 it will be off by more than 10 degrees. Since it's not designed to measure the oven temperature, I tried the boiling water test. Where I live, water boils at 201F. A thermometer placed in boiling water reads 196 or 198. Since I'll use this to tell when my pastries are done, I'm not sure it's accurate enough. It reads fairly quickly, but not immediately.
