I used a pair of separators that leave no room for error when it comes to grease. While it's not exactly a panacea for instant separation, it makes the process easier since you can get the flavor out of the drops without worrying too much about the fat coming out with the drops. You don't pour it out, just squeeze the handle to release the drops. It was actually one of Cook's Country/America's Test Kitchen's most recommended products, so I looked it up before trying it here as I needed it for my roast beef for Christmas dinner. (And were you right that this is the best separator!) My only issue is cleaning, but I plan to give it another try in the top rack of the dishwasher. (It's dishwasher safe for the top rack ONLY.) The water may not have been hot enough the first time I washed it.
