Always a great knife. Perfect size and excellent performance - that's for sure!

Knives couldn't be better. I have a lot of Global knives and also some Japanese chef's knives. The latter require special care and there is a never-ending balance between patina and rust. When I moved a few years ago, I took my entire collection of knives with me and packed them in a shipping box. Do you want to guess which box went missing? Someone has an excellent collection of knives. Having lost a couple of Global knives in this incident, I'm collecting knives again in my kitchen and trying out some of the new brands I've been keeping an eye on. for many years and also collects several custom made chef's knives. They are all good in their own right, but to be honest I enjoy owning them more than using them. Nothing beats pulling out a 10-inch blade once guests have arrived, but actually using it effectively, or even beautifully, is another challenge. With one of my knives it's like practice. my favorite knife under normal conditions. It cuts meat like a hot blade through butter, and slicing vegetables is always clean and lightning fast. The blade stays sharp and even after a few years I rarely dull it. An ordinary female hand is so perfect and precise that it gives the user great control and precision. I know that with my 8-10 inch knives it's often like keeping a samurai knife in the kitchen - and I'll admit that I ended up with quite a few cuts slicing and dicing. I know popular brands like Wüsthof or Henckels are mainstream, but they don't measure up to Global knives.
