Oh that lid! for cookware

The first thing you notice about this pot with lid is of course the handle on the lid. It's like a work of art. But none of that matters if the pan itself is of poor quality. This pot has a round, raised interior. It requires a different cooking style that I'm not used to. So if you've never used a pan like this before, you might have a slight learning curve. I tested this with the corned beef hash first, then added the beaten egg after the okroshka was browned. Just so you know, one of the potatoes I used was a blue potato, it didn't burn all over, it was just that the potatoes were very dark. I added a very small amount of oil after the pan was hot. I was careful not to use high heat as suggested. As a drop of water sizzled, oil was added, and after a few moments, pre-cooked potatoes and raw diced onions were added. After it was browned I added the egg and then flipped it over to allow the egg to cook fully. I wasn't entirely sure how the inner circles would handle fried eggs. Move half of it without sticking or burning parts, although the oil was used minimally. So everything was browned and nothing stuck. Remember, when I say nothing sticks, it doesn't mean the eggs will slide out like they're in a smooth pan. I mean it browned well and was easy to remove with a spatula. Especially with large pans like this, there are always places that get hotter than others. While this pan isn't perfect in that area, you'll be hard pressed to find another that cooks as evenly at this price point. The only thing that cooks more evenly is cast iron. Although this pan is not as heavy as cast iron, you should know that it is indeed a heavy pan. Part of that is the quality build that prevents hot spots, and part is the size of the pot. Although it can be washed in the dishwasher, hand washing is recommended. I've done both and hand washing is very easy with no scrubbing required. It also cleans up well in the dishwasher, although hand washing will likely last longer. Overall I think it's good value for money and the large size allows you to cook quite a bit. Beautiful appearance, good quality, performance. Spring. Highly recommended.
