This one really works

I have had many knife sharpeners over the years but none of them did what they were supposed to do. The best are usually manual, where you insert a knife into a slot and run it across the stone, then polish it on a ceramic wheel. However, they don't have clear knife guides, they have different sharpening angles, and it's easy for your knives to shift. The results are sometimes good, but never what they should be. I have Henckel knives, not top quality, but still good knives from a well-known brand. This Work Sharp is an exception to electric sharpeners. It has guides that hold the knife in the correct position and are separate for each side, then in the center is the familiar ceramic polishing disc (manually operated). I sharpened all six of my knives, checking them for sharpness first and then checking them afterwards. I used a sheet of paper and then a few different veggies. In all cases they were much sharper afterwards and that sharpness persisted for at least three weeks. Of course, after about 100 sharpenings (according to the product information), the grinding wheel (a kind of sandpaper) will wear out, but they are easy to replace. Haven't tried this sharpener on scissors yet, but when it works as well as it does on kitchen knives, I'm very satisfied. I don't have any other knives so I can't comment on that. The angle is fixed and fits American knives, not Japanese or other special ones as stated in the product description.
