Great quality, easy to use, worth the money.

I bought this knife to replace a KitchenAid noodle knife that burned my motor while making ramen noodles, which seem to be tougher than egg noodles. I bought the basic model which comes with a roller, handle, spaghetti attachment and clip. A motor is available as an add-on, but don't worry - the base unit is great! The clip has a notch to secure it in the socket of the device. You'll need a spacer at the bottom if you don't mind marking the bottom of the rack you're attaching it to. Also, the clamp has an easy-to-screw top screw, but it needs about an inch clearance from the wall of the cabinet or table under the counter so you don't squeak your fingers and scratch the wood when you tighten it. no problem holding him in place and feeding him pasta dough. The device rotates smoothly and easily even with heavier dough, and the second time around I was able to seal the ends of the pasta sheet into an endless loop and then flip and flatten it without stopping to pull and reload. The dough was also easy to keep straight and fed cleanly through the machine. The instructions also recommended a 'sacrificial dough' to absorb any excess oil from the gears that may have gotten onto the rollers - I didn't have to do this, it was clean when I got it and it's easy to clean hold a small brush - unless you haven't spoiled the batter and aren't licking into the mechanism. In short, this is a great device. Would recommend it unreservedly. I'd like a less bulky clamp mechanism, but that's the only issue.
