This knife is durable and holds is sharp blade well. The handle is real wood and should be maintained oiled. The blade should be wiped dry and oiled as well.I am using this knife set with my other sushi making supplies and storing in my hingiri which adds a little more protection from getting banged up in some drawer or wood block.The knife works well in avocado, salmon, tuna, cucumber, ginger, eel, and the finished sushi rolls.I believe this knife and it’s companion knives can be used for everyday food preparation and cooking.The handle is more doing and does not have finger impressions so you can hold it at any point along the wood handle.I am impressed with the knife and it’s boxed presentation and it could be gifted easily with no wrap needed.For some who use big box knife sets it might be different using custom knifes but indeed you train yourself as to which knife is used for which task you will understand the importance of chef quality knifes and how they remove frustrations out of food preparation and cooking.There are many videos on tube that explain sushi rice preparation (good rice is important) and sushi rolling. Do not get frustrated. This sushi knife will help make your beginners sushi better. Using an old kitchen knife will not work.
