OK, but not great: cutlery and knife accessories

The knife is sharp and well balanced. The SK-65 model has a strip of unpolished gray metal on the sides. It has no Granton rim with dimples. This band is not stainless steel. I got brown rust spots on the first day of use. I left a dirty knife unwashed by the sink for several hours. When I washed it there were brown spots of rust on that gray stripe. This knife must be kept clean and dry. We recommend hand washing and drying immediately after use. The knife is sharp but the blade cuts easily, a sign that the blade metal is not hardened. Helps to regularly finish the edge of the blade with sharpening steel. There is a gap where the handle meets the blade at the forward end of the handle because the knife shank is forged with a slight convex curve, but the handle's mating surface is flat and does not match the shape of the shank. The knife and the box it came in are marked "Made in Japan". The Chinese characters on the box are Japanese, not Chinese sentence structure. There is no indication that the knife was made in China, as another reviewer claimed. As for the asymmetric bevel edge, you can resharpen a symmetric bevel knife or convert it to an asymmetric left-hand bevel. This is easily done with one or both sides of a diamond wheel sharpener like Chef's Choice.
