Review on DALSTRONG Fillet Knife Flexible Gladiator by Jonathan Sriubas

Revainrating 5 out of 5

Blade badly bent straight out of the box

I was really excited to see a Skinner at this price point with such great reviews but I'm afraid it will be returned. Firstly, I don't like it when a company doesn't tell you what steel they use. "High-carbon German" is not steel. They have real names and it's usually a wake-up call when the company doesn't want to tell you what the name is. But these Dalstrongs seem to get such rave reviews that I decided to give them a try. Ultimately, I can't speak to Stahl because I've never used this knife. Right out of the box, the blade bent sharply to one side. The photos I uploaded don't really capture how bad this bend is. The main problem with this is sharpening. All knives eventually become blunt, all knives. Therefore, all knives must be sharpened. With the blade bent like this, there's no real way to sharpen the knife without ruining it. The bevels created by sharpening differ so greatly from one side to the other that the knife wears out more and more with each sharpening. Pretty quickly, one slope will be very steep and the other very gentle. This also happens with slight bends or uneven grinding. In this case, sharpening with such a sharp bend will ruin the knife sharply and quickly. The overall design is very elegant and I really like the handling of the material, it's a really good choice for this type of knife because it's a laminated wood. That is a good thing! But that doesn't matter when the blade is curved like that. It must be returned. The manufacturing defect is so severe that I can only assume other reviewers have never bothered to look directly at the spine.
