Whippy, sharp and light; Installed Workhorse Pro Sandwich

This bread and tomato knife is our new kitchen favorite at the great bar I work at in Las Vegas. I've had it for over two weeks now and all the positive feedback here is solid; This knife has seen a lot of use in the professional kitchen with impressive results. This bread scoop has three all-important details that you'll either love or hate. This is chopped knife liver. "It's whisper light, the exact opposite of heavy, and weighs more than the wing of a taped hummingbird (well, no exaggeration, three wings). - She's amazingly sharp. -- This is what Webster's Dictionary defines as "whippy" by default. This crazy knife is like those cartoon saws, all of which are brittle and will bend in a light breeze, but can still return to their original shape. That doesn't mean it's like wire that bends and stays bent, no, that notched cutter rebounds. It is so, so BENDY, but you will either love him to death or kill him in return. If you want a bread knife that has easily seen two hundred different sandwiches or more, with no sign of losing its cutting ability, and a lightweight, almost childlike blade, scoop this knife and go without coffee for three or four days. I'll end this monologue with all honesty and a few tips for people who might be new to the professional kitchen: Even if you're holding your knife right, if you're going around yelling "knife" and "angle" and such thinking remember, the most important thing. People who regularly go out to fix the appliances don't understand the kitchen at all. This knife cut the flexor or palm of my middle finger between the first and second joints. Down to the bone. There was still an hour before the service. The guy who makes lemonade. Not his fault, not mine, not the knife's fault, shit just happens and you move on, hopefully with no extra iron in your pocket.
