I found this paring knife in someone else's kitchen and had to get it. I have a whole collection of paring knives but this one is the best. I started using it immediately. It's made of carbon steel rather than stainless steel, which means it stays sharp longer, but it's more brittle and rusts more easily than stainless steel. So the tradeoff is you just have to clean it and dry it immediately, but that's my usual kitchen routine anyway because I like to keep my knives in good condition. The handle has a good ergonomic shape, making it very comfortable to hold. This knife is a winner.
