The perfect pan for an omelet!

Just bought this for a friend who was looking for a good omelet pan. I bought one 3 months ago and have been using it every day since and I love it! The bottom in contact with the gas flame is stained with olive oil spilled over the rim (I still use some butter or butter although it doesn't stick), but I'm careful with the inside, never use metal spoons or metal spatulas. and so far perfect. I use some dish soap and a damp paper towel, wipe and rinse, and it's ready to go again. The rivets sometimes need a little extra attention as I like to brown the cheese on the edges of the omelette, but a quick scrape with your thumbnail will help clean them up. I don't cook tomatoes or other acidic foods in it; I have all clad stainless steel that I use on them. I also still use an old non-stick pan (Greenpan, which doesn't work as an omelet pan anymore because it's a bit sticky) for things like fresh blueberry pancakes. I may be underestimating Ecolution's potential by limiting its use, but a reliable omelet pan is a must for me. My Greenpan was initially treated the same way, but after a few months it started to stick, even after additional oil cleaning. Unlike stainless steel pans, non-stick coatings don't last forever. My non-stick Calphalon has lasted the longest so far, about two years, but I paid a lot more for it and I like this one better.
