I really enjoyed using this product to cut my favorite chicken apple sausages. and vegetables. I love to stew vegetables so this knife came in handy for me and cut it very evenly! This knife stayed very sharp and clean (I've only ever hand washed it). I remember using plastic sheaths for my knives before, but this felt sheath is perfect for it and doesn't break as easily as plastic sheaths! Holding the knife is so convenient. I'm a bit of a novice and have learned a lot about knife quality through my undergraduate studies in restaurants and hospitality and I know this knife would be acceptable to my instructors!
