Waffle fries are the Cadillac of fries. Thanks to the increased surface area exposed to the oil, the fries will be crispier than any other piece. Take french fries, for example—they can be delicious right out of the fryer, but if left in a bowl for a few minutes, they turn into a wet, oily gob. French fries don't have that problem — if cooked properly, they'll stay crispy for over an hour before turning mushy. However. Cutting potato waffles is no easy task. When I saw an inexpensive cutter at the Wisconsin State Fair this summer, I decided to take the plunge and buy this cutter. Last year I came across a Cuisinart V-Blade mandolin ($80) that was supposed to cook waffles, but it never worked for me - the cuts got stuck in the mandolin's seam and the holder just stank - it kept going, me I know that you have to order a food holder with this cutter, but I had a plastic "cowboy hat" holder from a V-Blade mandolin at the state fair a few years ago - and it works great. When cutting french fries, you need to rotate the fries 90 degrees each time, but not 360 degrees 90 degrees at a time, just back and forth so that the ridges of the folds are perpendicular to the ridges of the blade. - it's a lot easier - back and forth, back and forth - light puffs make perfect waffles every time - but be aware that thicker slices can be quite tricky - you need to find the right speed and this takes a bit of practice. If you don't have a plastic cowboy hat food stand, you can easily get by with a couple of corn cob holders stuck in potatoes, but be careful, it's easy to cut your fingers or knuckles on the blade. However, I have found that a very hard sweet potato or yucca may require more force than this knife can handle, so I would prefer to use this knife on regular potatoes. Pros: • Very sharp, easy cuts • Well-made, durable construction • Two thicknesses - for fries and savory waffles • Platform locks in a secure position when knife is not in use • Inexpensive Cons: • Inexpensive - not for commercial use - likely won Won't hold up if blade isn't replaceable and may not be sharpened • Can be tricky to cut waffles properly - requires some practice • Platform is fairly narrow making cutting large waffles impossible • Requires a safety holder, none Cutting safety
