These knives are beautifully made and seem to have everything a good knife should have. They are made of carbon steel, so they must be hand washed and dried immediately. Do not worry. The large chef's knife is by far the best of the three, and it's a pretty good knife, but the other two are odd, to say the least. They seem sharp enough, but they work like very, very dull knives. As stated in some other reviews. After using them for a few months I have come to the conclusion that the blades are too wide for the cutting edge so when you press down the metal is too wide to push through the cut. I bought them for our camper. I cook a lot, even when we travel, and I needed good American knives. I have Wüsthof knives at home, but I didn't want to spend money to buy such high-quality knives for our "camper van". Now I want to either buy some cheaper disposable knives or go all out and buy three of the same knives I use at home. Anyway, I'd be happier. Eventually I will be replacing the two smaller knives in this set with something else. As they are, they are cumbersome and dangerous to use.
