cuts bread best in cutlery and knife accessories

Summary: I love this knife. Detailed test report: I have been using a Henckles bread knife for around 20 years. It slices bread very well, except for two things: it was a bit difficult to bake really crusty bread because the scallops are tender, so even though the knife is sharp, there's nothing to pierce the crust until the cut begins . And Hankles is bolt upright. This means that when you get to the crust of the bread you have to keep the knife perfectly on the cutting board and even have to dig a bit into the board to get through the bread. a smooth blade curve that solves both of these problems. It slices through the toughest bread like nothing. It's also significantly heavier than the Henckles: 8.4 ounces versus 5.3 ounces. The blade is about 50% thicker and much less flexible. The Heckles seems balanced between the blade and the hilt, the Kyoku is definitely heavier in the hilt which is also larger and rounder. I also had a Shun Classic bread knife in the store. I'm looking at this because I already have Shun Classic knives. The breakknife has smoother crests than the Henckles and is more balanced and lighter. It also has a D-shaped handle made from paka wood. Generally very pleasant sensations. But twice as expensive as Kyouku. I ended up buying a Kyoku and I'm glad I did. It's a bit heavy and the handle is the max size for my relatively small hand. If I was going to use it for hours, I would choose Shun. But that's not how I cut bread. So definitely a good buy for the price. Cuts very well. Much better than Henckles, maybe as good or even better than Shun. While I wish the Shun felt bigger and looked better next to my other Shun knives, it just doesn't cost twice as much as the Kyoku is such a good knife for what it is.
