We don't have super quality knives and while we'd love to get a $500 knife set, that's not in our current plans. Sharp enough that I cut my hand three times because I'm not used to being as careful with REALLY sharp knives as you should be. We turned a set of relatively inexpensive Cuisinart knives into a very effective set of knives. No, they're not $600 knives now, but I wish they were sharper! Exceeded my expectations.
