This thermometer measures the temperature directly on the grill surface, but reacts very sluggishly to temperature changes. The entire body of the thermometer must be heated or cooled in order for changes to be registered on the dial, and that takes time. What's the time? When I move it from the hot side to the cold (off) side of my gas grill, it takes 10 minutes for the new, cooler temperature reading to stabilize. The lag factor means you don't really know what's going on in your grill when you change the flame size. Additionally, half of the numerals on the dial were painted bright red, which faded to a very dull gold color after a few uses, making it difficult to read. Black numbers are still good.
