Grooming may require extra effort, but it's worth it!

I did a lot of research before purchasing GreenPan cookware. I was looking at other well-known brands when a clerk at a specialty kitchen suggested I check out GreenPan. The 11 piece set has pretty much everything I need. I really had to replace a few staples, including extra virgin olive oil, butter, and nonstick spray. To preserve the ceramic finish, the GreenPan makers recommend using virgin olive oil (I've only had store-bought oil), peanut butter, or ghee, among several other oils. Pure olive oil and ghee is the closest thing to what I normally use, but I now find that very little is needed and mostly for flavor. I found that only medium to low heat (gas) needed to be used and the pan heats up very quickly and holds the heat. I love that the glass lids allow you to see if the liquid is boiling without removing the lid and losing heat. I've limited myself to using silicone and wooden utensils to protect the finish. My big experiment this weekend was making tomato sauce. What a quick and easy cleanup! I was able to spread the tomato sauce on the rim of the pot with a silicone spatula and finish with a silicone sponge. One thing I found about this eleven piece set is that I wish I had an 8 quart pot for making pasta, sauces and soups. I plan to add it to my set as it is a must have for this chef's kitchen. I hope that with the utmost care I can get the finish of this ceramic bowl.
