I am new to pottery and bought this tool along with a few others to put together my 'starter' set. This blade is hard enough to cut through clay from soft to hard leather, but "soft" enough to flex under pressure. The blade will maintain a curve and will not return to a straight position if enough force is applied. I'm not sure if this is obvious to more experienced tool users, but as a beginner I've noticed that there's another clearing blade that doesn't read "soft" so I'm guessing the other blade is harder. I think any kitchen knife will do if you're looking for something a little tougher.
