This is a durable filler that will last for generations. I carefully inspected the meat cylinder to make sure there were no tears or seams for the meat to get stuck. The cylinder itself is a single smooth piece and the welds on the underside where the knee attaches are smooth with no rough edges. The air valve in the pressure plate works well and the meat cannot get in. I wasn't sure why I needed a second faster gear, but it's very handy for getting the pressure plate up quickly. The device wobbles a bit and has to be pressed against the table. The only thing I found "wrong" about the putty was that the edges of the metal on the stand are razor sharp. After cutting myself three times, once while moving and twice while removing the pressure plate, I sealed all edges with black tape. This solves the problem for me, but will not pass the hygiene test in a commercial kitchen.
