Cuts through things like butter.

An amazing tool for the aspiring cook. I bought it based on a review of the product at America's Test Kitchen, which praised its performance and safety. Apparently safety is extremely important with all mandolins as it is very easy to cut off part of the hand along with the food. ATK praised Swissmar in part for allowing you to change blades by touching sharp parts and being able to store it in a safe position so you don't accidentally cut yourself moving it in or out of a closet. discovered that there are dishes I now cook regularly that I would never have tried before because I don't have the knife skills to try the recipe in a lifetime. This mandolin allows me to cook a large batch of vegetables very efficiently in a short amount of time, and the vegetables are evenly thick, resulting in consistent cooking times and spectacular presentations. The blades are very sharp and cut through vegetables like butter. I had to stop from time to time to get the vegetables out from under the mandolin. I really don't like tilting it, leaning it against a bowl, or putting it on top of a bowl. It just doesn't give me enough stability to be comfortable because sometimes I need to apply some force at the end of a long stroke when cutting a pumpkin or eggplant lengthways. You must be very careful. There is a hand guard that will hold the food as you cut it. I highly recommend using it, especially if you're getting close to the end of what you're cutting. **** Melissa Clark of The New York Times has a great suggestion. Please buy a cut protection glove with the mandolin **** I love my mandolin very much and with this offer I want to use it more often.
