We are using this pan to make our tomato/onion/zucchini tarts. Previously we used a ceramic pie pan. This pan cooks a beautiful tart. We followed the directions for the first use. Clean up has been easy. The tip of another reviewer to put the pan down on a bowl to remove the side works beautifully well and we are grateful for the tip - so easy to slip the tart off the bottom. The one issue we have had is one we'll need to work out as we go - the crust tends to shrink down from the sides - it hasn't made a runny mess but does need to be worked out for a more pleasing presentation.
