I know I don't have the best electric stove on the market but I'm pretty sure it's supposed to simmer... but it doesn't. At lower settings the range is too wide to force the burner to maintain a reasonably constant temperature. So after some discouraging results with some caramel, it's time to do something to improve the results. It worked and for about $8 it was worth it. at least for a reason other than just getting a pot of caramel to come out right. We had these years ago when we were in the food business and had a gas range but never thought of trying an electric one until recently. The only downside is the side that the heat makes quick contact with the blue burner and stays there, but don't expect it not to burn and darken just because it's stainless steel. Another problem he solved was cooking homemade pasta sauce and preventing it from cooking. It's worth the investment, but on the one hand it's not a very pretty sight.
