Gyuto Chefs Knife are perfect for dicing, slicing, and chopping fresh produce from a farmers market to carving a roast chicken straight from the oven. Forged from a single piece of Japanese Inox Aus-10 High Carbon Stain-Resistant steel (HRC 61). Best in class in edge retention, toughness, and ease of sharpening. Can be resharpened to reacquire its original sharpness for years on end. Stainless steel bolster, full tang, and a high grade composite wood makes for a strong and durable knife that is beautiful, balanced, and comfortable. Handwash with mild cleanser; NSF Approved; Handmade by skilled tradesmen in Japan.

Kitchen Novice Loves It

Firstly, I know very little about what makes a good knife and my restaurant experience is limited. However, I can say that in the short time I've had this knife it has performed fantastically. Although it was perhaps a bit large for the kinds of foods I deal with day to day at the restaurant, I personally enjoy having the extra blade space in case something bigger comes my way and it could serve me well after I leave. This is a fantastic gyuoto. During the ordering process yoshihiro called to let me know that my saya cover was not in stock and would ship separate. The person I spoke with wanted to make sure that everything was perfect with my order. Great customer care!

AAAAAAAAA KNIFE !: my feedback

Just got delivery couple days ago, I opened it and tested right away, best knife ever had so far, light, very sharp, and balance between the handle and the blade. LOVING IT!

I've only had this knife for two weeks but I'm really enjoying it. I dropped it on the tip but only slightly bent it. It's nothing I can't work out. It is very light and sharp. I was hoping the edge would hold better than it has but it is very thin metal.

Best knife I've ever bought

I use this knife every day in a professional kitchen. Best knife i've ever bought. I would recommend this to any chef out there. Easiest knife ive ever sharpened as well. Holds an edge forever.

the best knife for everybody.

this knife is great for everybody because it's stain resistant you don't have to clean this knife often like you have to on high carbon knife, and it has 60 hardness rockwell c scale that really hard to find on stain-resistant steel knife. not to mention it's very light and the balance is incredible,knife with those qualities above you will never find it with this price.
