Hand crafted full tang knives forged from fine grained, German X50CrMoV15 Steel for incredible durability, stain resistance and exceptional edge retention. USPTO Patented Design. Each blade goes through an (ultra6) stage heat treatment ensuring every blade maintains its strength and function. Well balanced 5.5" handle and 7" blade with HRC 58 +/- 2 on the Rockwell Hardness Scale. Oval depressions on the blade create air pockets that eliminate drag, facilitating even carving. This Santoku knife can be used for mincing, slicing, chopping vegetables, slicing meat, and disjointing large cuts. Works well for heavy kitchen use. NSF International Certified. Lifetime Warranty against manufacturer defects. Wash knives with warm water and a little detergent, rinse carefully and dry with a towel.

Don't waste your money on this knife like me

Product not as advertised. Not sharp at all, will return, but the Amazon show on August 11 is the last day of return. Only used a few times as the Cutco knives I've had for 20 years are still sharper. Couldn't even cut a tomato well last time. A complete waste of money.

I love this knife, suitable for kitchen and dining room

I love this knife. Perfect size, feels good in the hand. I guess I've used dull knives for the last twenty years because despite what you throw at it, this blade slides straight with little to no effort. A chef's knife is on my wish list. I think they are that good.

Chef's Review - Cutlery & Knife Accessories

I have been a chef for over 20 years and have tried many Henckel knives and many other brands lately. I use avoidance knives, which we all know are great. but the price is not the same. Cangshan knives are surprisingly better balanced than Henckels and much better stainless steel than Shun and the price is great just order 6 or a full set of great knives.

. 2 weeks and I'm surprised at how good it is

This knife costs a little over $40 with shipping and I've been using it for over 2 weeks and I'm surprised at how good it is. . Not Japanese or German handwork, but for a knife made in China it is excellent, very sharp and stays that way. A very good knife and no signs of rust as someone else commented.

I've only had this for a few weeks so can't say how it will hold up, but it's very sharp and makes it very easy to cut veg and meat. We often eat pork tenderloin and it is very easy to remove the silver skin with this knife. It feels balanced in the hand and is not too heavy.

The Cangshan Big Boy

Cangshan delivers here too. I needed an interchangeable chef's knife that could make deep, long cuts that an 8-inch knife couldn't deliver. This knife is a beast! Without a doubt it's on par with my Wüsthof 9" Classic. As usual it was sharply sharpened and stood perfectly without rolling. If you're looking for professional quality at a great price look no further than Cangshan. As a testament to quality, the knives go up now priced to reflect the stability, quality and craftsmanship they offer…

Not disappointed with the quality of this brand

Again not disappointed with the quality of this brand. The santoku feels fantastic and even if you hold it with slippery hands it stays tight and won't slip off yet. The weight is perfect, not too heavy and not light enough to negate the weight of the blade doing the cutting work for you. The blade came razor sharp and packaged neatly, which is VERY important. The blade cut perfectly for a week of intensive production use. Anything from raw meat, thick-skinned fruit, to crunchy, fatty veggies…

Balanced knife, holds the blade well

I bought this knife to add a Santoku to my set of forged Wüsthofs. Having lived with it for a few months and seen how its edge holds up, I have to say I'm very impressed; while he is on par with Wüsthofs. I use this knife almost every day and it still glides over the tomatoes (a real challenge) without squeezing or resisting. In terms of ergonomics, it's easy to hold and control even with wet hands, and it's well balanced to quickly deal with anything you can throw at it. Knives like carbon…
