Hand-finished ceramic blades are made from Kyocera's proprietary zirconia material produced in Japan for exceptional quality and beauty. Ultra-sharp, pure advanced ceramic blades will maintain their edge up to 10x longer than steel blades. Stainless steel bolster and rivets represent the traditional style of Japanese cutlery. Lightweight and easy to clean, Kyocera ceramic blades will not brown food, are rust-proof and resistant to acids. Ideal for slicing fruits, vegetables and boneless meats, not to be used on hard or frozen foods.

The handle is loose - kitchen and dining room

I bought this in February and now in October the blade is dangling in the handle and getting worse and worse. Used to cut fruit and vegetables on a cutting board. It's spicy.

You need this in your line

This is a real beauty. I have Shun knives and they are my favorites, but you can't beat the fact that this knife stays sharp for years with normal use.

good balance, ideal for cooking vegetables

Excellent sharpness, good balance, ideal for cooking vegetables. The rounded tip is very handy for cutting broccoli into smaller pieces. Much lighter than an ordinary chef's knife, elegant walnut handle. Wide enough to slide under chopped onions etc to lift into a bowl. Expensive but worth it.

I wouldn't buy it again. Metal is much stronger.

Nice knife. Hot as hell (have been using it for a few weeks and still hot). Very light (the handle weighs more than the blade). Unfortunately, the blade broke off when crushing the garlic clove - you don't do that with this knife. I now have a 2" blade connected to a handle. Crap.

Good quality, very light

I prefer Nakiri knives more than anyone else, I just prefer them to chef's knives for some reason. The Kyocera is much lighter than the Wustoff Classic Nakiri that I've been using for a while (like this one). This was included in my kit so I won't see Wustoff in daily use but so far I'm happy with the quality.
