Description of Shun Classic Combination Honing Steel: Enhance Blade Sharpness & Durability, Effortless Daily & Weekly Care with Micro-Ribbed Surface, Premium PakkaWood Handle & Angle Guide

Shun Classic Combination Honing Steel gently realigns blade edge which naturally bends a tiny bit with each use; regular honing ensures the sharp edge of the knife is always in contact with food. The 9-inch stainless steel rod is crafted with two honing surfaces: a smooth surface for everyday care, and a micro-ribbed surface, suitable for weekly care. Shun’s hard, incredibly sharp steel blades mean honing is only required about once a week, depending on the user’s level of use; maintain perfect blade care with Shun’s Honing Steel. A beautiful and essential addition to any Shun Cutlery collection, this Classic piece is a handsome gift for a host, hostess, parent, grandparent, wife, husband, newlywed, homeowner, chef and cook. PakkaWood handle ensures secure grip and ebony finish matches the Shun Classic series of knives; built-in angle guide matches Shun’s 16( blade angle, making it easy to hone at the correct angle.

Excellent sharpener

SHUN's high quality does not disappoint. I bought this sharpener to replace one that I lost after moving from the knife block. It feels good in hand, works well for daily/weekly touch ups and of course looks great with my other SHUN DM series knives.

Pros
  • Great selection
Cons
  • Poor instructions

Everyone should buy it!

Easy to use yes but why isn't the blade tilted the other way? Sharpening and sharpening are very good. I use it in a Japanese mini cleaver my dad takes with him on his tour of Korea. Last sharpened in 1980 and never sharpened. I go through 20 times on each side with the blade angle and 10 times on the smooth side and now I can cut the paper, not perfect but pretty good.

Pros
  • Great for a small home
Cons
  • Difficult to remember but it was

Good quality, needs practice without guides

The quality of the honing stone is very good so I have no complaints about its look and feel. I like that there is both a sharpened side and a finer sharpened side to give a sharper edge. It's a little tricky to use if you don't know the correct angle to hold the knife when using the sharpener. You don't want to ruin your blade, but by holding the knife at too awkward an angle you can get the opposite effect of what you want either way. I am satisfied with the product, others may not.

Pros
  • Great construction

Home use for knife sharpener

Very good for my home kitchen. I use this sharpener once a week to keep my Shun Classic sharp. The built-in guide near the handle helps to find the right angle of the knife. This YouTube video feature for this product makes it easier to use properly. I've been using this whetstone for about 5 months now and there are no signs of wear. It's still like new. This product works as intended and is of excellent quality. Overall I am very satisfied with this purchase.

Pros
  • Stable design
Cons
  • Negative impression

Anyone who takes good care of their knives knows the value of good steel. Lick a few times after each blade use and they'll always be sharp. However, I had steel from Henkels, Wustoff and others. This is the best I've found, even compared to others under $100. If you want GREAT steel at a GREAT price you can't beat this one. Another bonus is that they engrave the initials on the handle so you can send it as a personalized gift! (I have made)

Understanding Design Makes All Good

First, let me briefly outline some of the points raised by critical reviewers of this sharpening steel, which is perfect for Shun knives. The handle guard acts as an angle guide to align the knife at a 16 degree angle to the sharpening steel when standing upright on the cutting board with the knife pointing down towards the board. All sides, both curved and flat, offer a 16 degree angle for blade alignment. The flat side is to prevent the honing steel from rolling when placed on a flat surface.

Pros
  • Quality Construction
Cons
  • Requires Socket
