Good, stable sharpener for traditional blades.

Really nice upgrade from our previous unnamed sharpener. He has restored all our old cutlery to well sharpened tools. Just remember to keep the blade straight and just pull when sharpening. No back and forth. A firm hand, but not too hard, doesn't help.

This WAS a great knife sharpener for about 3 months. I have a full set of Wüstof Classic chef's knives and not only does it not sharpen my knives anymore, it dulls them when I try. Based on my culinary experience, I expected more from something called Wustof. Very disappointed.

In a word: useless.

I am surprised and disappointed that this sharpener is as useful as a screen door on a submarine. It depends on the brand and I have Wusthof knives. I first tried it at Williams-Sonoma and it got high praise. Now back to the old school method, my diamond stone and finally steel. I just wanted something less time consuming; This product is not. looser.

The best knife sharpener?

I bought this for my wife along with a 16-piece Wüsthof cutlery set. She worked professionally with chef's knives. She says it's the best sharpener she's ever used! Note: French knives, German knives and Japanese knives have different blade angles. They range from 10* to 20* degrees. It is best to buy a sharpener from the same manufacturer that you bought the blades from, otherwise you will dull or thin the blades.

It works great with an 8 " chef's knife

I use it to sharpen my Wüsthof Classic Ikon knives. It works great with 8" chef's knives, 6" utility knives and paring knives. I have traditionally used a Japanese water stone to sharpen my knives. It works just as well but is easier to use. It takes less effort to adjust the blades to effortlessly slice a tomato. One thing I noticed is, that it's pretty easy so the knife isn't quite vertical in the sharpener. This makes the knives a lot less sharp. Be careful and keep the knife vertical…

NOT SHARPENABLE due to defective ceramic and construction

The reason I bought it was that my previous cheap Wüsthof sharpener didn't work either. On this more expensive device, the ceramic cracked the first time I used it with my Wüsthof filleting knife. Poor quality and workmanship. The crack is visible to the naked eye. You don't expect that from Wüsthof. I do not recommend anyone to buy this or any other Wüsthof sharpener. I am currently looking for an alternative sharpener for my very boring Wüsthof fillet knife.

It works great with an 8 " chef's knife

I use it to sharpen my Wüsthof Classic Ikon knives. It works great with 8" chef's knives, 6" utility knives and paring knives. Wasserstein for sharpening my knives. This works just as well but is easier to use. It takes less effort to adjust the blades to effortlessly slice a tomato. The sharpener is quite vertical. Great quality good for knife sharpeners

Got this and step 4 as I just bought a new set of Wusthof knives and wanted to try both. I thought I needed a 4th step, but the entire Wusthof line, at least in my 25 piece set that includes almost all of their knives, has a 14 degree blade bevel. There's nothing wrong with the 4th stage, of course, and it fits some Japanese knives with a different blade grind, but it's plastic and significantly lighter. Angle not as advertised

3 stars given because at least it seems to be well made. However, the text states that it is a 30-degree sharpener. Wüsthof has some indications that this is 28 degrees. The packaging says 34 degrees. When they contacted Wüsthof they said it must be 28 degrees and it was a typo in their box. However, when measuring the sharpener with a protractor and also from a photo using software, it is significantly closer to 34 degrees than 28 degrees (see photos). I'm not a knife expert, so I don't know…
