I used to mount a wheel with one grit on one side and another with a different grit on the other side. I found that when I could use one wheel for one side and the same style/grinding wheel for the other side, the tools, knives, and jewelry I polished were actually easier to reach. This is especially useful with knives because you can polish one side or the other and point the end away from the engine. It has really made my buffing with blades or small jewelry easier and safer.
