Good assembly, high quality. However, this does not work with Le Cruset (7 inch) or small fully clad pans (sizes 4 5 inch). It works with carbon steel pans. I ended up having to send him back because he is so picky. The temperature control/hold is a nice feature, but with a sensor under the glass it will certainly go beyond the norm. The temperature overshoot is most problematic when the load is low (small empty sump with little oil). It holds a good 13 liters of water at 75° C. The heat output can be finely adjusted in 1% increments. At low power levels, other cheap induction cooktops will flash at 12-second intervals, causing the food to burn. This one won't. I hope that Vollrath can develop even better induction ranges. Their 4 series induction range is way better than anything I've tried.
