It exploded when used in frying cannoli shells

I should have taken a photo but was dying to make sure the entire glass was washed as we have multiple animals and didn't want to that they got the splinters in their paws. I was roasting cannoli shells at 375 when they really exploded. I heard it happen, pop, then the thermometer fell off the pot and there was a hole about 1cm near the top. I found two shards of glass on my desk, but a small shard flew across the kitchen onto the floor. Upon reflection, I came to the conclusion that this thermometer was defective and not reading the correct temperature. Two weeks ago I fried donuts and they browned a lot quicker than usual even though the thermometer reads the temperature I normally fry donuts at. Since I fried the cannoli at 375°C, it made sense that they would explode if the oil was actually hotter than the thermometer indicated. I ended up throwing away the whole batch of cannoli as I wasn't sure the oil didn't have a jar in it. I regret the purchase.
