So. I recently discovered that my favorite pan to date is made of Teflon. I was so frustrated because I've been using it for multiple meals a day for years. It was my old companion. After reading how dangerous PTFE/Teflon is, I did so much research and searched the internet to find my next set of nonstick pans. this time teflon free. I've read countless pages of reviews on ceramic pans (and I've had them before and hated them, especially not being able to use high heat and oil). I finally settled on these ceramic/titanium Goliath pans and was so skeptical that they could actually be non-stick. My experience with ceramics so far has been a burnt and burnt mess that I didn't want to clean up. But most of the reviews here were raving, so I took the plunge. These pans arrived this morning and I've used them twice today and I'm already very impressed! The first dish I made was sautéed with coconut oil and veggies/egg rolls for my partner. Everything cooked very quickly, evenly and slid out of the pan as expected. As for me, I prefer to cook with very little or no oil if I can get away with it. I just made a simple popcorn side dish and literally did NOT add any oil. These little puppies slid across the pan with no problem. not a single grain stuck to the pan after ten minutes of frying and didn't stay in the pan. I'm so happy to have found a pan that is safe, healthy, aesthetically pleasing and doesn't really burn. I will post an additional review after about a month of use to ensure they stand the test of time and heavy use. But for now I have high hopes! Fingers crossed! Oh yes, and on the other hand, as many have pointed out, the lids completely trap water at the edges. So I'll look for another case that fits. But come on, nothing's perfect, right?
