My Favorite Pan (Edit: Swinging)

I bought this 10 inch pan to replace a previous All Clad pan that I destroyed. On first use I noticed the pan rocked, which my old pan didn't do. This indicates that the bottom of the pot is not flat and is not fully touching the heating element, which can result in uneven heating. In the interests of research, I wandered the aisles of Williams-Sonoma, checking that the bottoms of all pans and pans were level. Almost all had a slightly concave bottom meaning the interior was slightly convex and this explained why the oil flowed to the edges of the interior. The only exception was the perfectly flat bottom of Williams-Sonoma brand cookware, Thermo-Clad, to name a few. There was variation from one pan to another. Edit: Demeyer is also completely flat. My own 12" All-Clad is also concave, but very concave. I could slip a **US nickel** through the slot, meaning it's at least 2mm out of plane. However, the 12" wobbles Not shell, so a bulge alone does not mean wobbling. However, the lack of contact with the burner is undesirable and does not do justice to the flat-bottomed advertisement. I dusted the pan evenly with flour and set it on medium heat; After a few minutes it was browning fairly evenly in the pan, so the convexity doesn't seem to have affected the heat distribution in the pan. So ultimately the problem isn't with the concavity of my 10" pan, but rather with the bottom rim of the pan not lying flat. I have ordered a replacement and will be returning it in the shipping boxes once I receive it.
