Just used this 15 inch paella pan for the first time and it worked great! Great at heat distribution but not as heavy as cast iron which makes it difficult to maneuver - great balance of weight and heat distribution This is a large pan so if your burners are a bit spaced like ours you'll need to move the pan around back and forth while cooking to cook the paella evenly. Like any raw steel, it requires maintenance, so don't use soap and remember to apply a light coat of oil after cleaning. In addition, before first use, you must follow the instructions to remove the protective coating on the pan - simply rinse with warm water first, then boil the water adding vinegar for 10 minutes, clean and you're ready to use The red handles worked well and stayed cool enough to move the pan without the oven. We have found that pans of this size can feed about 6 people. . Highly recommended!
