A pillow or towel should be used as an assist grip. A well-used pot has signs of wear. Expect some discoloration after use. The walls are thinner than your heavy pots and pans - that's a wok. Heating, and especially excessive heating, will cause discoloration of the steel. It doesn't bother you at work. Use the bartenders to clean it of food or oil residue. Excellent skillet.
