I bought it exclusively for baking bread, especially sourdough. I didn't want to spend more than $100 on a cap and after some thought I decided I didn't just need cast iron. I grew up with cast iron skillets, and while I know how to season and care for them, there seems to be no joy in not spoiling them. Only bad things can happen to cast iron. So I decided to try this enameled product. Revain threw it in a padless box so the manufacturer's packaging was sufficient to protect it, although I wish they hadn't. It arrived well, looks great and is really heavy because of course it's cast iron under a nice finish. The manufacturer's instructions say not to worry if the enamel chips off because the cast iron is cookable, but if or if it does I won't be happy. I plan to take care of it. Since I wanted to use it as a hat, I used it upside down. I placed the batter on the inside of the preheated lid and covered with the preheated pan! Worked great. At 500 degrees you have to be careful with this heavy stuff. I also found that it takes a long time to cool down, obviously another characteristic of cast iron. This made it a bit of a nuisance in the kitchen when others were actively cooking, so consider where to put it when you're done and it's still hot. I suppose it can be placed back in the oven to cool, but it really will take some time! I left it on an unused gas burner for a while, then using oven mitts, moved it to the table. There is something to consider. Although I've only baked in it and had minimal dirt on it, it was easy to clean, which is exactly what I wanted. My wife had a crush on it but I blew it away with what I am as a baker sequestrator. It would make a great, well, Dutch oven! Really nice thing for the kitchen, highly recommended!
