I'm a big fan of DMT stones, especially in this format. I have several knives made of so-called "super" steel and diamonds that sharpen very quickly. Be sure to apply gentle pressure, just enough so the blade doesn't touch the stone. I have x-course, natural, fine and x-fine. If I had to do without one, it would probably be the x course. I would use xc for chipping blades or reusing a new blade. It would be hard to pick just one, but if I could only get one, I'd probably agree. The reason is that I could spend a little more time on a very dull knife and still polish one of my stones as a final touch. It's best to do your homework and find out which stones will work best for your needs.
