Great Stones!: Sharpening Stones

I'm a big fan of DMT stones, especially in this format. I have several knives made of so-called "super" steel and diamonds that sharpen very quickly. Be sure to apply gentle pressure, just enough so the blade doesn't touch the stone. I have x-course, natural, fine and x-fine. If I had to do without one, it would probably be the x course. I would use xc for chipping blades or reusing a new blade. It would be hard to pick just one, but if I could only get one, I'd probably agree. The reason is…

Great stone for kitchen knives

I already have a DMT FWF Diafold Diamond Whetstone Sharpener Fine which is great for getting started with a very dull knife. But that's a small course for daily sharpening. Fine tuning with this super fine stone and a few strokes with steel will make your kitchen knives very, very sharp! In fact, the first time my wife went right through the lemon with a sharpened knife, she cut her finger. Best diamond stone I've used

I've used a fine diamond stone in the past to give my knives a respectable edge. This is followed by finishing Arkansas Stones in medium to hard hardness depending on how much work needs to be done to get a good edge. This stone takes a lot of time and effort in my traditional process of getting the blades of my knives either at or very close to final stage. For the knives in my kitchen, this is all I need.
