Easy Clean-up makes it easy to move on to the next meal!

I use them for convenience as I don't have to clean my Dutch Oven between each meal. When you're doing public showings at DOG or cooking for a crowd, the time savings add up! I don't have to waste time and resources heating water for washing, washing and drying when I'd rather be preparing the next dish. - Cook the ziti as it's difficult to wash and I don't feel like it affects the flavor in this particular dish and it protects the cast iron/seasoning from the tomato sauce). It really affects HOW things are cooked as you create a barrier between the food and the cast iron. Make sure the liner is pressed firmly against your DO to ensure full contact. I have to fold the edges in order for the liners to fit my two 12" DOs. One is Camp Chef Deluxe and the other is No-Name which was a gift and is larger/deeper. There is a learning curve. with any type of dish (baking/stew/etc.) and you might lose some of that "authentic" look in public, but these liners definitely have their place! I can usually clean them and use them at least twice (but not with a dirty, burnt ziti so I try to use liners that I've already used at least once) not worn yet [especially no-name], they lack the polished, super-smooth interior of old cast iron that, when a spoon runs over bumps, punching holes in the liner.) You could try carefully cutting the bottom of the old ones, which I discard and use them to buffer the bottom of a fresh liner. Whatever you do, DO NOT try high-leis instead use foil as it will not tear! I learned this the hard way!
