It's the best thing I've ever used - stop looking because it's all there

This is the best thing I've ever used - stop to look for, because it is all there. And sadly (!) I bought tons (here on Revain) that I had to throw away! Seriously, it sucks, but nothing more. I've been cooking for over 4 decades and have dealt with many underperforming, poorly designed thermometers (an old metal meat thermometer with a glass lid, several manual sugar bottles, and an electric one). It's decades old and used for nostalgia :-) Thermae lollipops. Manual and Favorites were recently purchased here from Amz. Manual thermals are mediocre and awkward to use with chocolate, which only makes matters worse. They have trouble getting an accurate temperature because the clamps holding them to the steamer (for example) get in the way and cause the chocolate around the pear to cool and harden. BAD! So the temperature is the chocolate chilling in the flask, not what's melting (or not) in the pan. Even mixing is not enough. You have to put out the lightbulb and it's painless. Another electrical term was the El-Cheapo, a metal probe device that was inaccurate. It has both an infrared test and a handy metal penetration probe. You can use both and confirm. Both are very good and very close. Infrared detector - SAVE with chocolate in a water bath! Point an object at the surface of the melted chocolate and press the button and you can quickly aim the IR and the temperature (C or F) will be measured and held for a few seconds for you to read up close (poor eyes here). it's so cool No wasted chocolate, precise and fast. I also confirmed the probe and they are really close. The advantage of the probe is that it is thin and there is little food wastage, so it can be easily wiped clean (if you want to confirm with the probe). Now I use IR for everything. It's cool to see the temperature of my bread rising. I can confirm the correct temperature for yeast growth. Without disturbing the rising dough. just aim, click and voila.
