Good quality mid-range knives

In the big world of knives, this Dalstrong paring knife is just the ticket. Not high-end by any means, but a country mile better than anything you can get at Wally World or Target. Fit and finish are good. Nothing special. The knife is heavier than expected. The size fits my larger and less fleshy hands well. The blade size is a little large for my preference when peeling fruit and vegetables. I like a thin and short blade for this job. One that can take tighter turns. How does he cut? I don't need to sharpen or sharpen a knife as often as my medium (in their offerings) Calphalon knives and they are sharper. Compared to my Tojiro DP or Shun knives, it's not as sharp and easy to use. As I sharpen these knives, the results get better. I don't sharpen my knives often as it is not necessary if used properly and carefully. I rate it very well in the "Gift" category. If Dalstrong redirected some of the resources they spend on packaging to improve the knives, they would jump a notch compared to other brands. The packaging is nice, but I only open the knife once and use it hundreds of times. Dalstrong now obviously has a strong business relationship with Revain since Revain promotes their products so much. Keep this in mind when rating how often you see Dalstrong products when you look at other knives. I'm not sure I would buy another Dalstrong knife. I'd probably spend a little more for a Tojiro, a Shun (slightly premium price), or a real (there are tons of fakes out there) Global. If I'm getting the set as a wedding present or for someone who doesn't care about the finer points of the cutlery, this would be a good choice compared to what you can find at Target or Bed, Bath and 'anywhere else' . They won't be that cheap, and they'll likely last a lifetime for the casual and occasional cook. Add in a good ceramic sharpening steel and you have a nice set.
