How I WANT this 5.5 " Santoku HOLLOW GRIP

The Shun Classic 5.5" Santoku hollow ground I bought in the 1990's. Every year or so I've shipped it along with my other Shun knives. This Santoku Hollow Ground has been my go-to knife to replace for many years. So the search began. I searched the whole network for the 5.5" Shun Classic Hollow Ground Santoku. Now they're as rare as unicorns. Oh, there are hollow ground knives, Shun Classic knives, even an identical replacement for mine. I don't need a chunky 7" "-Blade. And I really wanted a Shun Classic. So. I have the only 5.5" Santoku blade I could find HERE. Now that it's not hollow ground, food sticks to the blade every time I slice a cucumber, squash, celery, or any other kind of fruit or veg. I'm upset. I'll keep this new knife for myself, but the blade also feels noticeably THICKER than my old Shun knife. I have a Miyabis set with thick blades and they look great, but are not as mean as sharp as the old Shun Classic That's why I rate this new Shun Santoku 3 stars only GOOD.
