Review on ๐Ÿ”ช Optimized 5-Piece Old Hickory Knife Set 705 by Ontario Knife Co. by Shawna Lamb

Needs extra sharpening, but not bad!

I know and love knives (just for cooking)! I have a mix of vg-10/aus-10 top kitchen knives and these. Don't use vg-10/aus-10 for heavy ones cuts as they may chip otherwise. They are great for heavy cutting (or otherwise) but will need to be sharpened upon receipt.I should note the 3.5 twin knife as I've seen it mentioned several times. So far As far as I can tell the company didn't sharpen it properly, I've used it on stone and ceramics and couldn't get it sharp (as others have mentioned) I ended up taking it to the grinder and refinishing the entire blade and then fine sharpening it and now it's awesome the thing is i think it comes at an angle closer to 30 degrees than 20 (just not sharp) then if you get it a bit sharp it gets fast because of the double angle unsc harp. If you don't recreate it, it won't be sharpened and sharp. It's fine as the others are perfectly sharpened with no serious refinement and this is one small knife in the set. I just want you to know that this isn't a very good pairing knife until it gets redesigned. The other longer double knife in the set is good, albeit with a bit of effort. Keep them dry or they will rust (not rust like my others). Why buy? Once sharpened they are easy to sharpen and long lasting knives. High quality stainless steel (vg-10 / aus-10 is also easy to sharpen, but will chip when cutting other vegetables, fruit or meat (no bones, hard gourd or similar, otherwise it will chip). Cook and be happy! Update: got Bought a set for my son just half a year after my set. All five knives were sharp including the twin knife. I quickly sharpened them all anyway and they are razor sharp without much effort. I don't know if the blade packaging can be any different its as packaging. If I had received them first I would have given five stars without a doubt!
