They have good functionality and stay sharp

I have been working in commercial kitchens for over 20 years, mainly in 4-5 star restaurants. Many years with Henckles and Wüstof knives, this is my first Dalstrong. A small serrated paring knife can come in handy for small produce or vegetables, it has good functionality and stays sharp. After using the knife for a few months, to my surprise it turned out that the Dalstrong is a very high quality knife, the handle, blade, weight and grip of the knife are all excellent and very sharp. It's a good looking knife and the sheath that comes with it does a great job of keeping the blade sharp in transit. The only criticism I have of this particular knife is that the notches are too aggressive on this blade length. Typically, you're cutting smaller, more delicate items with a 3.5-inch blade, and you don't have much room to hold an item like a grape tomato. sawing motion. Because the blade is short, there is very little room for saw movement before it cuts. Most serrated paring knives I've used in the past have a less aggressive serrated shape. This is just my opinion. As I said above the quality of the knife is excellent and I would not hesitate to buy a Dalstrong again.
