The vertical blade that cuts vegetables into strips is made of plastic. (Horizontal - Ceramic). The adjustable mandolin thickness adjustment is a square plastic bar at the bottom that has different height shims on each side of the bar that adjust the height of the pivoting platform to adjust the slice thickness.
