I bought this to make large batches of pancakes. It straddles two burners on my new smooth top stove (non induction). I don't have a bridge element. It heats evenly enough that the pancakes that are "between the burners" get fried the same as the rest. I'm taking off a star because after a while of heating it warps a bit and I don't have it on mine want to sit on the stove. Luckily, the stove and pan are hot enough at this point for the pancakes to cook evenly. If using on a smooth surface stove, you MUST use oven mitts to hold it in place when flipping the pancakes. It slides around the stove and has no cooling handle. So far (two uses) the non-stick coating works great. I hand wash as directed.
