Know your limits first

After all, nothing is perfect. My regular pots have Circulon anodized on the top. I bought an 11" grill pan and a 5 quart pan to see how they work, but I was mainly interested in the stovetop pancake grill pan. The grill pan can cook four 4-inch pancakes at a time. These ceramic pans have a Thermolon non-stick coating. This product wears out over time, and Greenpan doesn't say how long it will last, but it does come with a two-year warranty against manufacturer defects. Do not use cooking sprays or extra virgin olive oil as they will leave a burnt residue, use some butter or regular olive oil, do not use metal utensils and do not store other metal pans or utensils in them that could scratch the surface, do not use heavy ones Heat and do not burn food in the pan and do not hit the metal core of the pan with sudden changes in temperature. In general I am satisfied with the purchase. The only caveat is that these aren't the most durable products and buyers should be aware of the limitations pans have before purchasing. These are attractive pans and so far they seem to be working very well. The handles get a little hot on the stovetop where they attach to the pan, but not the entire handle. The pans seem relatively thin, but in my experience they heat up quickly and evenly. Use over medium heat to avoid burns. Greenpan recommends that if the Thermolon coating does not provide non-stick cooking, simply use the pans as if they were enameled.
