I received this 6 liter Dutch Oven yesterday and immediately gave it a good wash with hot soapy water and then dried naturally with a soft kitchen towel. I always rub coconut oil on the underside of stainless steel. I noticed a black residue on the paper towel. This morning I decided to try my new job and cook my famous beef stew. Since there was this sediment yesterday, I thought it would be a good idea to boil some water in this pot before using it. After boiling the water for 15 minutes, the water was drained and the pan wiped with another kitchen towel, and then the bottom and sides were rubbed with coconut oil. Again this black stuff was on my paper towel. I thought I would send this pan back, but instead I called Fabraware and spoke to the woman about what was coming off the bottom and sides of the pan. She couldn't understand why this was happening. So I asked if anyone else noticed. The company replied that it was probably some kind of polish and nothing to worry about. Well, I'm not sure if it's made in China or the US; but I certainly didn't want to eat anything from that pan until this problem was solved or couldn't be solved. Especially if the thing was made in China. So I boiled half the white vinegar and half the water for 20 minutes and then drained the water from the pot. Then he got his friend the bartender out and went through the whole inside of the pan, washing and rinsing again. Then I rubbed the bottom and sides with coconut oil and the black residue disappeared. So I made the stew by first roasting the beef that had been dredged in flour. To my surprise, it worked fantastically, wasn't sticky and browned well. Then I added the rest of the ingredients and this pan worked fantastic. I have a glass cooktop and have never set the fire higher than medium. It was one of my best stews. I have the entire Vintage Revere Ware collection except for this one. I have never seen black deposits on stainless steel cookware. That's why I gave it a 4. Let's see how it holds up over time. But I am very careful with all my stainless steel cookware. I think I'm obsessed with cleanliness because everything needs to be shiny and clean. Will update later after using this pan but other than the leftovers it seems good and cooks well. The grips got a little warm, but not hot. I love the feel of the pan and the bottom seems very nice. It's not flimsy, not too heavy. hope it lasts; If so, it will be the goalkeeper.
